Fall harvest season is almost here, and gardens are bursting with produce! An amazing way to preserve autumn's bounty of vegetables—and to supercharge their nutritional value—is to ferment them. You may have seen—or purchased—small-batch sauerkraut and kimchi for sale in stores, often with a hefty price tag. Well, guess what: you can easily make those tasty fermented foods at home, for just a fraction of the cost!

If you are interested in making fermented foods but don't know how to get started, join this class for an afternoon of fermenting fun and learn how to create amazing flavors with fermented sauerkraut, kimchi, and more. In this four-hour workshop you will:

  • Taste your way through a variety of fermented foods to get an idea of what you like!
  • Discover the science behind the “magic” of fermentation and the many health benefits of eating fermented foods.
  • Learn what to look for when selecting ingredients and what equipment to use (you may already have everything you need).
  • Get hands-on practice harnessing the transformational power of fermentation by starting your own vegetable ferment—with lots of guidance, tips, and tricks—for you to take home.
  • Understand safety and health issues associated with fermented foods, and how to troubleshoot things if they don't go as planned.
  • Develop your own inspirational list of flavor combinations to experiment with at home, as well as ideas about how to incorporate fermented foods into your diet.
You'll leave with the information and confidence you need to create an array of delicious vegetable ferments in your own kitchen. Before you know it, you'll have a whole collection of actively fermenting cultures bubbling away on your countertop!
 

 WHAT IS A SLIDING SCALE? In order to make our classes available to a broad and diverse audience, we use a sliding scale payment model, which means YOU CHOOSE how much to pay, within a given range. Paying lower in the scale is like receiving a scholarship. Paying higher in the scale helps cover the complete course costs. You can pay MORE than the high end of the scale: this “extra donation” helps make our sliding scale possible.
